What an M4A actually is, and how it becomes an MP3
M4A is not a codec, and that is the single most useful thing to know about it. It is an MP4 container carrying audio and nothing else. Apple gave audio-only MP4 files the .m4a extension specifically so that Finder, iTunes and the Music app would not try to treat them as video. Underneath, an .m4a and an .mp4 are the same kind of file with different contents.
Because it is only a container, two genuinely different things travel under the same extension. Most of the time it is AAC, the lossy codec used by Voice Memos, purchased music, GarageBand bounces, YouTube audio downloads and just about every Apple export. But an .m4a can equally hold ALAC, Apple Lossless, which is what iTunes writes when a CD is ripped with the lossless setting. Same extension, same icon, completely different file. The only reliable way to tell is to look at the size: lossless files are several times larger for the same length.

What is the actual difference between M4A and MP3? expand_more
MP3 is a codec and a file format at once. M4A is only a container, an audio-only MP4, and what sits inside it is usually AAC. For the same file size AAC is the better codec, particularly at low bitrates, which is why Apple adopted it. MP3 is the worse codec and the more universal format, and that universality is the entire reason to convert. If a device made in the last twenty five years plays audio at all, it plays MP3.
Is M4A the same as MP4? expand_more
Structurally yes, practically no. Both use the MP4 container. An .mp4 normally holds video and audio together, while an .m4a holds audio and nothing else. Apple introduced the separate extension so that audio-only files would open in a music player rather than a video player. Renaming one to the other does not break the file, but it does confuse whichever application tries to open it.
My .m4a is Apple Lossless. Does that change anything? expand_more
It changes the quality maths in your favour, and nothing about the process. ALAC is lossless, so the audio inside has never been through lossy compression. Converting it to MP3 is therefore a first-generation encode rather than a second one, and the result is cleaner than the same conversion from an AAC file. It also means the MP3 will be far smaller than the original, often by a factor of five or more.
