How a MOV becomes an MP3
MOV is Apple’s QuickTime File Format, and it is a container rather than a codec. Opening one tells you nothing about what is inside until you look. VidClean opens the container, discards the video stream completely, and re-encodes only the audio track, which is why the MP3 comes back at a small fraction of the size and why the job finishes fast even on a long recording.
What the audio actually is depends entirely on where the MOV came from, and MOV varies more than most containers. Anything shot on an iPhone, an iPad or a Mac camera carries AAC, and so do QuickTime Player screen recordings. But a MOV exported as ProRes out of Final Cut or Premiere, or written by a field recorder or a professional camera, very often carries uncompressed Linear PCM instead, sometimes at 48 kHz and 24-bit. Occasionally you will find Apple Lossless. All three are decoded and encoded to MP3 the same way.
The output is MP3 at a constant 192 kbps from the LAME encoder, with the sample rate and channel layout of the source preserved. That distinction between AAC and PCM matters more than people expect. Converting an AAC MOV to MP3 is a second lossy encode and loses a little. Converting a Linear PCM MOV to MP3 is the first lossy encode that audio has ever been through, so it is the cleanest possible version of this conversion.

AAC, at either 44.1 or 48 kHz, and stereo unless you were using an external mono microphone. That means the conversion to MP3 is a second pass of lossy compression. At 192 kbps the difference is not audible on speech, which is what almost every iPhone recording contains. Files shot in High Efficiency mode change the video codec to HEVC but leave the audio as AAC, so they convert identically.

It depends on what the MOV was carrying. If the audio was AAC, which covers essentially everything shot on Apple hardware, the MP3 is a second lossy encode and a small amount of quality is lost. If the audio was uncompressed Linear PCM, which is common in ProRes exports and field recorder files, the MP3 is the first lossy encode that audio has been through and the result is as clean as this conversion gets.
